The multi-million dollar makeover to Sydney's Paddy's Market in Haymarket by the Doltone Hospitality Group has created 47 food and beverage stores and experiences. The new look venue offers two exciting new licensed bars, 16 unique hawker stations, an eclectic central food and produce market, a glass encased sustainable urban farm, an on-site coffee roaster, and a selection of roaming mobile carts. Savour an Asian market menu tailored by Australian chef Luke Nguyen while First Nations chef Mark Olive showcases Indigenous cuisine. Spanning over 3,000 sqm (32,292 sq. ft), Hay Street Market provides a versatile setting for events of all sizes—from intimate cocktail gatherings for 30 guests to full-venue buyouts accommodating 1,000+ attendees. Guests can enjoy a range of dining experiences, including curated buffet or food station menus, or a digital wallet system that allows individuals to choose and purchase their own meals. It's an ideal destination to celebrate the rich diversity of Australian cuisine.
A member of the collection of Ultimate Wineries Experiences of Australia, Chandon Australia has recently opened The Chandon Homestead. Located in the Yarra Valley, an hour’s drive from Melbourne / Narrm, The Chandon Homestead offers a refined setting for an exclusive wine tasting and elevated dining for groups of up to 50 guests. Blending heritage and modern Australian design inside are three elegant spaces - The Greenpoint Lounge for dining, The Vintage Room for private tastings, and the timeless wrap-around verandah overlooking spacious manicured gardens. Guests can enjoy menus crafted from the produce of local artisans including tableside cooking, paired with Chandon's Terroir range or Chandon’s premium Étoile tasting with a Chandon Ambassador. This sparkling new venue is a jewel in the Yarra Valley wine region.
Housed in restored buildings in the historic Rocks precinct, The Collective brings together five new venues for group events. The Garden, a 100-seat courtyard with 1826 sandstone walls, serves modern Australian cuisine. Sunlit by day, The Garden transitions into a starlit bar for evening events. Accommodating up to 350 guests, The Dining Room offers fine dining showcasing seasonal produce and craftsmanship for an elevated dining experience. On level one, The Rocks Room includes a flexible seated dining room for 70 guests or 100 standing and includes a small bar area and room for entertainment. With seating for 50 guests and space for 100 standing, The Lounge offers a refined open plan space with contemporary touches amongst old timbers. For intimate groups the The Cut offers an elegant steakhouse and bar for up to 20 guests.
