The Cutaway
Situated on the Sydney Harbour waterfront at Barangaroo, The Cutaway is a venue for spectacular events. Carved from the sandstone beneath Barangaroo Reserve, this unique venue offers 5,000 sqm (53,819 sq.ft) of cultural and event space. Inside, a main event hall and pre‑function space, two gallery rooms and a dedicated First Nations education space are set across two mezzanine levels, with capacity for up to 2,000 guests. Event spaces can be booked individually and scaled for intimate gatherings or grand events. The striking architecture includes a concrete floor with up to 13 cultural timber designs, a natural 14-metre (50-foot) sandstone wall extending to day-or-night light, and a floating bronze spiral staircase that connects the levels. The sustainable venue is powered by renewable energy, and naturally cooled with seawater from Sydney Harbour. Bookings are available from August 2026 and managed by ICC Sydney.

Discover an exclusive dining experience, designed to be enjoyed over several hours, just an hour north of Sydney. Accessible only by boat, seaplane or helicopter, Peats Bite is a hidden venue on the Hawkesbury River, looking across to the protected Muogamarra Nature Reserve. Guests are welcomed with Australian beers, a sparkling cuvée and soft options, alongside a selection of refined canapés. Elevate your event with an oyster bar featuring natural Sydney Rock Oysters and native finger lime vinaigrette. In the open restaurant lunch on a menu created with local produce and paired with Australian wines. Choose from a selection of entrees before a shared main course such as a Marble Score 5 Jack’s Creek Wagyu rump cap with seasonal vegetables and salad dishes. Finish with a fresh seasonal dessert, culminating in an Australian cheese platter. Up to 100 guests seated or 150 guests standing can relax in this tranquil setting with uninterrupted views.

Consider Pearla & Co, a new seafood restaurant located in North Fremantle, a short drive from Perth. Its name honours the seafaring community who bring ocean-fresh produce to the table. The elegant dark-walled dining room is adorned with black tables while turquoise seats reflect ocean hues and floor-to-ceiling windows invite sea breezes. Two dry-age fridges create theatre where the day’s catch hangs. Snack on fougasse bread topped with seaweed, Rottnest Swordfish Belly Nduja or dry-aged Fish Tartare before small plates of chargrilled Fremantle Octopus skewers with tomato XO and labneh. Savour a main dish of dry-aged local fish served with Prince Orange potato with spiced citrus pil pil and curry leaf. Finish with dessert showcasing seasonal fruit. An extensive list of local wines complements the menu. Together with al fresco tables the venue offers an exclusive dining experience for up to 70 guests.
